National Pumpkin Day: Ways to spice up pumpkin bread - Daily Californian

In case the fact that it’s October and fall wasn’t enough of a reason to eat all of your favorite pumpkin-flavored treats, Oct. 26 marks National Pumpkin Day! Pumpkin bread will always be the ultimate fall treat. It’s super easy to make either from scratch or with pumpkin bread mix, which sells for only $3 at Trader Joe’s! Although delicious on its own, in honor of this National Pumpkin Day, we at the Clog have come up with some ideas of how you can spice it up with simple variations.

Make it into muffins

As satisfying as it is to have a fat slice of pumpkin bread, nothing beats having a muffin! They’re the right portion size, easy to grab on the go and have a greater ratio of crust to muffin than a slice of bread does, if that matters to you.

Add chocolate chips

Pumpkin bread might be great on its own, but as with most things in this world, it’s that much better when you add chocolate. Adding a bag of chocolate chips is the perfect way to get your chocolate fix with your pumpkin bread.

Throw in a cream cheese swirl

For a creamy surprise, add a cream cheese swirl to your pumpkin bread. To do this, blend together an eight ounce package of cream cheese, 1/4 cup of white sugar and an egg. After you mix your pumpkin bread batter, pour half of it into the pan, then pour the cream cheese mixture over it — and again pour in the other half of the pumpkin bread batter. Cut through the mixture with a knife for the swirl effect, then bake the bread as normal. This nontraditional pumpkin bread is sure to wow those you share it with!

Add a streusel topping

Adding cinnamon streusel topping is the perfect way to spice up an ordinary pumpkin bread! To make this, stir together 1/2 cup all-purpose flour, 1/2 teaspoon ground cinnamon, 1/4 cup granulated sugar, 1/8 cup light brown sugar, 1/8 teaspoon kosher salt and 1/4 cup melted and cooled unsalted butter. Sprinkle the mixture over the loaf or muffins before putting either into the oven, then bake the bread as normal. The streusel will bake up golden and buttery, adding the perfect crunch and extra sweetness you didn’t know you were missing!
