In 1946, Premier Baking Co. opened in Pensacola and quickly lived up to its name, establishing itself as the premier local bread bakery in the area for more than half a century from its West Garden Street location.
Beginning Nov. 1, the brain trust at the Cypress restaurant that assumed the former Premier location — and inherited most of the vintage bread-baking equipment — will launch Emerald Coast Bread Co.
"This building was built to produce bread," said Cypress part owner McKenzie Lovelace. "We have the luxury of the equipment that was already here, we have the original butcher block tables, we have the original stoves that work. The Hobart mixers are from the (1950s) and have been serviced, so they're in great shape."
Lovelace said the goal is for Emerald Coast to make fresh-made artisan bread available to as many people as possible through wholesale distribution and to give area restaurants the option to pass on the national suppliers in favor of a locally made product.
"There are some great bakeries in town, like Craft Bakery. They were in this building with George (Lazi from George Bistro) and now she is doing amazing stuff on a smaller scale," Lovelace said of Craft Bakery owner Jordan Hewes. "She's doing croissants, sweets, scones and she's delivering them to coffee shops, and that's not at all our target market. Our target market would be wholesale accounts to restaurants with the volume of 2,000 hamburger buns a week."

Only 2,000 square feet of the 7,400-square-foot Cypress property on 1124 W. Garden St. is dedicated to the restaurant, giving head baker and part owner Coleman Jernigan plenty of room to play with in the back of the building.
Marble rye, challah, rustic Italian, bagels, whole wheat variations, croissants, focaccia, brioche buns, Jewish seeded rye and traditional baguettes are the types of bread rising in the ovens now at Cypress for Emerald Coast Bread Co. distribution.
Where can I find Emerald Coast Bread Co. bread?
Cypress, which opened in February, will make room near the end of its bar to sell Emerald Coast bread to customers during lunch and brunch service five days a week. Apple Market has already agreed to sell Emerald Coast bread in its shop in the very near future, and Lovelace said more local distribution deals should be finalized soon.
Cypress itself is taking advantage of its sister business by incorporating Jernigan's fresh bread creations into its recipes. The dinner options and entree style at Cypress won't change, but Lovelace said Pensacola can expect more of of a bread-based lunch menu going forward.
"Revamping our lunch menu to feature and highlight the breads, that's another goal," she said. "We'll offer salads and sandwiches, move further away from the entrees and the hot plates and the seafood and the fish of the day to focus really on every type of bread that we have. Think about being in a European-style sandwich shop, somewhere out in Paris. We're kind of changing to that focus."
For six weeks, Emerald Coast bread has sold well at Palafox Market under the Cypress banner. Lovelace said shoppers of the downtown Pensacola farmers' market have raved about her company's products since late August.
"We have sold out of bread every single time we've been there except for one, and it was kind of a dreary day," she said. "People now are starting to realize we're there, they're coming in for their everything bagels, immediately when the market opens they come get their bags, they know they want their Jewish seeded rye, so they're really starting to come in for the products they know that they love."
In addition to Apple Market, Emerald Coast has four restaurant clients in town, including Restaurant Iron, Union Public House and Casino Beach Bar & Grille. Iron Executive Chef Alex McPhail said it won't be long before his restaurant is incorporating the aforementioned array of Emerald Coast breads into its menu.
"(Jernigan's) kitchen is mainly set up for like French bread and sandwich buns and those kind of things, but he can pretty much do anything," McPhail said Wednesday. "So now that I know that, any kind of bread use that I can come up with he can make it for me. And it's just cool to keep the money in the city and utilize all that vintage equipment."
Cypress doesn't plan to open a separate retail shop and is for now only focused on distribution to the Pensacola market. But Lovelace said operations should expand west to Gulf Shore and Orange Beach, Alabama, and north to the Navarre area within the next six months.
The bread will be available for individual retail sale at Cypress beginning Nov. 1 from 11 a.m. to 2 p.m. Wednesday through Sundays.
